Air fryer vegetable fritters

Ingredients

2 large baking potatoes
1 carrot
1 red onion
1 small bunch fresh parsley
1 tbsp plain yoghurt (soy, oat, dairy)
1 tbsp plain flour (gluten-free if preferred )
1 tbsp chia or flax seeds
1 tsp smoked paprika
1 tsp garlic powder
Water
Salt and pepper

Garnishes

1 chopped spring onion
Small handful chopped fresh basil and parsley
1 tbsp pesto
1 tbsp plain yoghurt
  1. Method

    Step 1

    Add your chia or flax seeds to a ramekin and cover with water. Set aside for 10-15 minutes while you are preparing the rest of your ingredients. The mixture will become gelatinous, acting as a binder for the fritters.

    Step 2

    Peel and grate your potatoes and carrots, then use a clean muslin cloth or tea towel to squeeze out as much water as you can. You may have to squeeze two or three times.

    Step 3

    Add the grated potatoes and carrots to a large bowl, along with a finely chopped red onion. Follow by adding the paprika, garlic powder.

    Step 4

    In a separate bowl, mix the yoghurt and flour well until free of lumps. Finely chop the parsley and add to the grated vegetables, along with the yoghurt and flour.

    Step 5

    Lastly add the chia/flax ‘egg’ and thoroughly mix all the ingredients until even.

    Step 6

    Set your air fryer to 180 C and line the tray with greaseproof paper.

    Step 7

    Spoon out the mixture into roughly golf-ball sized spheres and use your hands to flatten.

    Step 8

    Space evenly on the air fryer tray and cook at 180 C for 15 minutes. Use a palette knife to turn the fritters over halfway through cooking.

    Step 9

    While the fritters are cooking, prepare your garnishes. Mix the pesto and plain yoghurt.

    Step 10

    Remove fritters from the tray, leave to cool for 1-2 minutes, drizzle with pesto yoghurt and garnish with fresh basil and spring onion.
