Air fryer courgette fritters

These courgette fritters (or zucchini fritters, depending where you are) are utterly moreish. Make them in the air fryer for a slightly healthier twist on the usual recipe

Ingredients

Makes a large side for 3

2 large courgettes
1 large tbsp plain flour (gluten-free optional)
1 tsp smoked paprika
1 tsp garlic powder
1 tsp corn flour
1 tsp dried parsley
Salt and pepper to taste
150 ml milk (oat/soy/nut/dairy)
1 large tbsp nutritional yeast
50g breadcrumbs (gluten-free optional)
  1. Method

    Step 1

    Cut the courgettes into batons, approximately one centimetre wide.

    Step 2

    To make the batter, mix all of the ingredients apart from the breadcrumbs, together in a shallow dish. Use a whisk to bring the batter to a creamy, but thick consistency.

    Step 3

    Pour the breadcrumbs into a separate shallow dish or plate.

    Step 4

    Line your air fryer tray with greaseproof paper.

    Step 5

    One by one, use tongs - or hands, or dip each courgette baton into the batter, covering both sides, and then into the breadcrumbs. Lay the battered baton on to the airfryer tray. Repeat the process until all batons are covered. Try to line them up next to each other with a few millimetres in between to ensure the batter doesn’t run together.

    Step 6

    Set your air fryer to 180 C and bake for 15 minutes, turning the fries once halfway through cooking.

    Step 7

    Serve with a choice of dips and fresh parsley to garnish.
