Air fryer brown sugar oat cookies with dark chocolate and sea salt

These sweet and savoury moreish cookies are made in an air fryer, which we can't help thinking makes them particularly delicious. These are adaptable for gluten-free and vegan diets. Makes 12 cookies

Ingredients

1 banana
100g butter (or non-dairy spread)
130g dark muscovado sugar
130g plain flour (gluten-free if preferred)
150g oats
1 tsp vanilla essence
Sea salt
1 tbsp milk (oat / soy / almond / dairy)
100g chopped dark chocolate
  1. Method

    Step 1

    Peel and mash the banana in a large mixing bowl.

    Step 2

    Add the muscovado sugar, butter and vanilla essence, and whisk together until smooth and creamy. This may take a few minutes as the sugar tends to clump together.

    Step 3

    Sift the flour into the creamed mixture and follow by adding the oats and milk. Mix well. Lastly, add the chopped dark chocolate and a pinch of sea salt.

    Step 4

    Set the air fryer to 180 C and line the tray with greaseproof paper. Use a tablespoon to evenly spoon out the mixture, spacing evenly. Use the back of the spoon to flatten each cookie down.

    Step 5

    Bake for 10-12 minutes.

    Step 6

    Remove from the fryer and leave to cool for 5 minutes. The cookies will harden as they cool. Sprinkle with sea salt and enjoy.
