Air fryer loaded sweet potato skins

How to make a loaded sweet potato even more delicious? Cook it in an air fryer and add sour cream and guacamole

This recipe was made using a Cuisinart Air Fryer Mini Oven, £250

Ingredients

Makes 6 potato skins

3 large cooked sweet potatoes
1 handful raw spinach
½ red bell pepper
1 tbsp cream cheese (vegan optional)
50g grated cheddar or red leicester cheese(vegan optional)
Small handful fresh parsley
Salt and pepper 
Guacamole and sour cream to serve
* you can also add cooked bacon or ham pieces for a non-veggie option 
  1. Method

    Step 1

    Pre-cook 3 sweet potatoes in a steamer or oven.

    Step 2

    Slice your sweet potatoes lengthwise and scoop out ⅔ of each slice into a bowl. Set the skins aside.

    Step 3

    Finely chop the spinach, parsley and pepper and add to the sweet potato. Stir in the cream cheese and lightly mix. Season with salt and pepper.

    Step 4

    Spoon the mixture back into your prepared potato skins and sprinkle with grated cheese.

    Step 5

    Place the sweet potatoes on your air fryer tray and cook at 175 C for 10-12 minutes.

    Step 6

    Garnish with fresh parsley and serve with guacamole and sour cream.
